Gourmet Pizza

You go to the grocery store or a pizza place and buy the dough. I like to start with frozen dough. The night before I want to make the pizza, I remove it from the freezer and put it in the fridge. The next morning, remove from package and it is thawed, but still sort of hard. With your hands, stretch and pull the dough to reach the edge of the pan. Lightly oil the entire surface and cover with plastic wrap. Let rise for a few hours. Add more olive oil and start adding your toppings. I usually don't use tomato sauce. My favorites are: Romano cheese and rosemary (crunch the herb - use sparingly, like a focacia) sliced figs (fresh is best) and blue cheese, fresh tomatoes and thinly sliced onions, cheese, oregano and basil (fresh is best) sausage and cheese eggplant (thinly sliced) and hamburg
